Inkomazi is a traditional South African maas, sour milk, that you find next to normal milk on the shelves of all South African food stores. It tastes a bit like a runny yoghurt, and I thought it could make a really nice, slightly sour ice cream.

A quick; easy  and delicious dish

Ingredients: (serves 3-4)

  • 1 red onion sliced;
  • 1 medium pepper chopped;
  • 2 to 4 chicken breasts;
  • Half a cup of Inkomazi;
  • 1/2 teaspoon of turmeric powder;
  • 1 teaspoon of ground coriander powder
  • 1/2 teaspoon of red chilli powder (can add more for spiciness);
  • salt for taste; and

  • defrost and wash chicken breasts;
  • in a medium mixing bowl or dish, mix the inkomazi; turmeric, chilli powder; salt and ground coriander;
  • mix well and let it it for 10 min;
  • drain chicken and add to the inkomazi mixture;
  • allow to marinate for at least 20 minutes;
  • heat a pan on medium heat with some olive oil;
  • add your onion and peppers and sauté until translucent;
  • once done, layer the bottom of a baking dish with the sauteed onion and peppers;
  • add the marinated chicken breasts and pour in the remaining marinade;
  • pre-heat an oven on 200°C;
  • bake the chicken for about 20 to 25 mins until cooked and golden brown;
  • garnish with some fresh coriander; and

Serve on a bed of rice or with some naan bread. #Delicousness
